Arhar Lentil and Quinoa Soup: A Meal Extraordinaire

Some essential ingredients include a red onion, a large red tomato, a sprig of spring onions, fresh ginger, fresh garlic, and a bunch of fresh baby spinach.

Pressure cook the lot with a pinch of turmeric and 3/4 cup of lentils and quinoa each. Stir well to mash it up and add only boiling water to get to right consistency.

Give it a tempered seasoning with ghee that includes black mustard, cumin, and dry red chili flakes. Squeeze Half a lime and a pinch of salt.

Don’t ever forget to start your tadka with hing. 😍
