Baked Baingan Subzi: Eggplant At Its Delectable Best

Bake them whole covered for an hour at 400 F; then, chop them up and toss into a seasoning of finely chopped onions and a cup of Tomato Chutney. Simmer for another hour. Serve w/ Pitas and yogurt or cottage-cheese. You will love yourself!
