Papaya-Cucumber-Red Onion-Mango Salad: So Divine You Need To Pinch Yourself

Some days back, I had introduced a Thai-style salad w/ some variations (click here), and so in-love did my firstborn fall with it, that she decided to make one all by herself– with some variations of her own, chief among them being the julienned papaya in it, and the toasted sesame seeds and crushed peanut topping.  Also, instead of whole garlic, she used the homemade garlic-chili chutney– a staple from our refrigerator– for the dressing.  The result was even more amazing than my inaugural salad in my mortar-and-pestle.  See for yourself!

That’s right:  it’s possible, and it’s available as long as lunch supplies last for the day!  Not bad, even if I say so myself!

Michigan Salmon Salad: An Awesome Medley of Flavors and Textures

That’s right:  and you’ve got to see it to believe it, nay, you’ve got to eat it to believe it.  Because what you’ll find is this incredible array of items in this big bowl that is packed with fresh and healthy ingredients.  The salmon is a baked fillet no more than three ounces, I would say.  It is laid on a bed of salad greens, and tucked all around the sides are good sized heaps of cranberries, blue cheese, chopped walnuts and mandarin oranges.  And what about the salad dressing, you say?  That would be Paul Newman’s Raspberry Vinaigrette, if you please!

Ahhhmazing!  Especially, if you consider the fact that it was prepared as a to-go salad, not one served in a fancy restaurant.  Every now and then, it pays to pick up a quick salad on the go, and eat it in the comfort of your office!  Check out the pictures below for proof.

Baby Spinach Salad w/ Red Lentils & Rice

This was lunch today:  a big platter of baby spinach that served as a bed for a mix of red-lentils and rice, topped with sliced sweet onions and a dressing of tahini.  It was called the Sharif Spinach Salad.  Yum!

How To Build A Hamburger (Or Make A Salad)!

I shared yesterday an album that documents our bounties from our annual Memorial Day Cookout.  This post is a derivative of that one, only it highlights one aspect of the meal:  the hamburgers that were craftily and lovingly built.

See here the ingredients that were used to do just that.  Alternatively, if you wish to skip the burger patty, you could very well do just that, and the meatless burger would very well be the most gourmet veggie burger ever!

Still more creatively, you could skip both burger and bun, and treat yourself to these luscious veggies and have them just as they are.  One delicious mouth-watering slice at a time!

You Call That A Salad? Well, Actually, Yes!

The concept of a salad in Indian cuisine is quite different from what it is generally understood to be in the West.  A fresh salad in the West is usually one that has a green leafy base of lettuce or spinach to which a number of fresh veggies, fruits, nuts, meats, cheeses and dressings are added.  

In India, a salad will rarely have a raw leaf within it, unless it is for a garnish.   A typical salad consists of onions, tomatoes and cucumbers.  Sometimes, radishes and carrots.  And of course, green chillies.  And a few slices of green lime that in and of itself is to serve as the dressing.

In my house, I’m sometimes so lazy in that I will cut up only one lonesome red onion and slice it onto a plate, and voila, there’s a salad for you!  And actually, this is not such an uncommon occurrence in many an Indian household.  An onion and a few green chillis go far in creating just the crispy, crunchy and oh-so-hot flavor that will go with whatever your meal might be.

So, here’s to this lovely Pyaaz (onion) Salad today.  Only beware to rinse your mouth well after your meal so you don’t carry onion-breath around the rest of the day!

A Greener Salad, Greek-Style

Yesterday, I posted about a Salad that didn’t look too green, and a friend of mine was fast to point it out!  Well, today, at a lunch meeting, I had a salad that was a lot greener, and thought I should post this for the record as well!  This was a Greek-style Salad, and here’s what was exactly on this plate of mine:  Iceberg Lettuce, Shredded Carrots, Sliced Red Beets, Sweet Banana Peppers, Red Onions, Black Olives, Feta Cheese, and a tangy Vinaigrette Dressing.  SA-TIS-FY-ING! 

Well, it would have been great if that was the only thing there, but they also had a big spread of Pizza, and I couldn’t resist a small square-slice that had Grilled-Chicken and Spinach on a Marinara Saucebase and a Mozarella topping.  Oh, and that piece of Fried Chicken and three Fries— I couldn’t resist those either!  Check it out:
