Giant Cupcake For Labor Day: A Gigantic Effort
With an extraordinary cheesecake filling. And I can’t take an iota of credit for this– all of it goes to my firstborn. My only involvement in this endeavor was to buy this clever mold set, and offer a lot of oohhs and aaahhs as the piece came together. There are two molds, btw, and an “insert” that creates a cavernous spot in the center where the cheesecake filling went in. The frosting was creamcheese.
The top part of the cupcake was a “spice cake” and the bottom part, a “carrot cake”. Mmmmm! A true labor of love on Labor Day!
